Dear....Everyone!
How are you all? Guess what we made for the first time last week?? Homemade Ravioli! I'd bought me Mum a Ravioli Maker for her birthday, and since then we had also found a Pasta maker at a thrift store (gotta love those treasure troves!) so we were set for ravioli success! Using a - Wait! Let me turn on the phonograph to get you into the Italian Ravioli mood.....wait a second.....here:
Ah, yes....so nice! Okay, so as I was saying, using a good friend's recipe, we made up the dough, rolled out strips, and ran it through the pasta maker to thin it.
Next, we laid out a long strip of pasta dough on our Ravioli plate. We filled each pocket with cheesy goodness, then folded over our long strip for the top.
Making sure to get the air out first, we rolled over the plate with the rolling pin to seal the raviolis and cut out their shape. The edges of the plate are kind of zig zagged so when you roll over it, you pinch off the extra dough around each of the raviolis!
Then....we popped them out of the plate!! Voila! We did it! We froze the raviolis till we were ready to cook them and they were yummy!
